Butternut Squash Mac And Cheese
This butternut squash mac and cheese is a perfect way to sneak some squash into a classic Southern dish. It's still rich and creamy as any classic version would be.

- 1 medium-size (2 1/2-lb.) butternut squash, peeled, seeded, and cut into 1/2-in. pieces (about 6 cups)
- 1 Tbsp. olive oil
- 2 tsp. kosher salt, divided
- 3/4 tsp. black pepper, divided
- 1 1/4 cups lower-sodium chicken broth
- 1 1/2 cups whole milk
- 1/4 cup unsalted butter
- 10 oz. extra-sharp Cheddar cheese, shredded (about 2 1/2 cups) and divided
