Skillet Huevos Rancheros
This skillet version of huevos rancheros isn’t exactly traditional, but it’s a delightful twist nonetheless. Plus, cooking everything in one pan makes it extra easy to prepare on busy mornings.
- 3 poblano chiles
- 2 Tbsp. canola oil
- 16 oz. fresh Mexican chorizo
- 1 white onion, thinly sliced (2 cups)
- 2 garlic cloves, minced (about 2 tsp.)
- 1 (28-oz.) can crushed tomatoes
- 1 (15.25-oz.) can black beans, drained and rinsed
- 2 tsp. kosher salt
- 1/2 tsp. dried oregano
- 1/4 tsp. black pepper, plus more for garnish
- 8 large eggs
- Crumbled queso fresco
- Chopped fresh cilantro
- Texas toast, for serving
