Portuguese-Style Meatballs
Bathed in a bright tomato sauce that’s infused with white wine, these extra-large beefy meatballs carry loads of flavor from ground coriander, lemon zest, nutmeg, and garlic. They’re delicious on their own, with bread to swipe through the sauce, or served over rice to soak up all the goodness.
- 2 large eggs
- 1 1/2 pounds 85% lean ground beef
- 3/4 cup panko
- 1 1/2 teaspoons ground coriander
- 1 teaspoon grated lemon zest
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground nutmeg
- 1 tablespoon finely chopped garlic (about 3 large garlic cloves), divided
- 2 1/2 teaspoons kosher salt, divided
- 2 tablespoons extra-virgin olive oil
- 1 cup finely chopped yellow onion (about 1 small onion)
- 1 tablespoon tomato paste
- 1 teaspoon sweet paprika
- 3/4 cup (6 ounces) dry white wine
- 1 pound plum tomatoes, finely chopped (about 3 cups)
- 1 1/4 cups chicken broth
- Chopped fresh cilantro, for garnish
